For all cheese and beer devouring men, The Cheddar Gorge Cheese Company are re-releasing their renowned Wimbledon Brewery Copper Leaf Cheddar; a gentle mellow traditional cheddar combined with the extraordinarily delicious Copper Leaf Ale.

Katherine and John Spencer, founders of the family-run dairy based in Cheddar, Somerset select the correct age cheddar a mellow around 6 months old; old enough to have the traditional cheddar qualities but not so strong that it competes with the beer flavour to create this unique offering.

Mark Gordon, Founder of the Wimbledon Brewery, says `here at the brewery we celebrate the best of British artisanal food and drink production, and so we’re honoured that the only cheddar producer still located in the village of Cheddar has chosen to produce this special example using our beer.”

The Cheddar Gorge Cheese Company has made it their mission to produce heritage cheddar cheese true to its regional provenance and traditions and now, they are merging the best of tradition and modern with this special cheddar – ale creation.
